JAMES HILL
EXECUTIVE CHEF

Prior to joining the Pacific Fish Company, James Hill had been executive chef of Michel's at the Colony Surf Hotel since April of 1979. Chef Hill had the overall responsibility of menu planning, food procurement, and overseeing a staff of 40 chefs who diligently prepared the magnificent cuisine served at Michel's. Prior to Michel's, Chef Hill served as corporate chef at Channel Island Hotels in central California.

Born in the state of Washington, Chef Hill worked for Red Lion Inns for eight years. His intuitive style and reputation for cost-effectiveness, quality food service, management skills, and dedication earned him the Red Lion Inns' Chef of the Year award.

Chef Hill's awards to date at Michel&8217;s include: 'Best Dining Destination' from Travel/Holiday magazine; 'World's Most Romantic Restaurant' from Lifestyles of the Rich and Famous; and the Cartier Award for 'Elegance in Dining.'
